California Cole Slaw

Hmmm...thought that this might be a good forum for adding/sharing recipes. I just mentioned this one, so here it is, courtesy of Mel.
California Cole Slaw

1 cabbage

1 bunch green onions

2 packages ramen noodles, uncooked

4 oz sliced almonds

¼ cup sesame seeds

· Toast almonds and sesame seeds in frying pan over low heat until golden brown (Watch them, they go fast.)

· Shred cabbage. Chop green onions. Break up ramen noodles.

· Mix all ingredients together. Toss with dressing just before serving (or else the ramen gets soggy)


Dressing

6 tablespoons rice vinegar

½ cup oil (Sunflower, Mazola, corn oil is good. Olive oil is bad in this recipe).

4 tablespoons sugar

1 teaspoon salt

1 teaspoon pepper

*1 teaspoon dark sesame oil

*1 tablespoon Spike seasoning mix (or any good mix of seasoning)

Shake all ingredients together. (It's better if you can make the dressing the day before and allow flavors to blend.)

My mom used to make that same coleslaw all of the time. Must be a mid-west thing....But I have to say, it sounds fabulous right now! Jessica
